The Classic Method comes from the symphony of two great grapes: Chardonnay and Manzoni Bianco. In order to protect its hints and aromas to the maximum, the grapes are cooled and then subjected to a soft pressing phase. The vinification involves an alcoholic fermentation in temperature-conditioned steel tanks until the March following the harvest. Then it is passed to the assembly with a careful refermentation on the yeasts for at least 24 months. Being a Brut Nature, the disgorging takes place without added sugar and liqueur d'expedition. Brilliant straw yellow with gold hints.
Intense with aroma of ripe fruit and honey, enriched with floral hints and leavened bread dough.
It is very broad and soft, with a savory and dry finish. Good initial acidity and marked minerality.
It is ideal perfectly to accompany shellfish, seafood, sushi; it is also ideal as an aperitif.
